🥘 The Recipe
Ingredients:

Mutton/Lamb Trotters (Paya): Cleaned and prepped
Water: 250ml
Garlic 6-7 pods: Freshly crushed
Black Pepper 40 pods: Whole peppercorns, coarsely crushed
Turmeric Powder 1/4 Tsp: For its anti-inflammatory properties
Red Chilli Powder 1 Tsp: To taste
Coriander Powder 1 Tsp: For depth of flavor
Salt 1 Tsp: To taste
Fresh Garnish: Chopped coriander leaves and lemon slices

Method:

Prep: Add the cleaned trotters to a pressure cooker with 250ml of water.

Infuse: Add the crushed garlic and turmeric powder.

Spice: Add the freshly crushed black pepper, red chilli powder, coriander powder, and salt.

Aromatics: Toss in a handful of freshly chopped coriander.

Pressure Cook: Secure the lid and cook on a medium flame for 10-12 whistles until the meat is tender and the marrow has released its natural oils.

Serve: Garnish with extra coriander and a squeeze of fresh lemon for the perfect balance of flavors.
