INGREDIENTS:
Whole Wheat Flour – 2 Cups (300 g)
Water (Lukewarm) – 1 Cup (240 ml)
Honey/Sugar – 1 Tsp
Yeast – 2 Tbsp (12 g)
Olive oil – 2 Tsp (and some more to grease the dough & bowl)
Salt – 1 Tsp
SUGGESTIONS:
* Water should be lukewarm for the yeast to proof i.e., activate.
* Adding salt & oil, in the beginning, reduces the growth of yeast. So always add salt & oil after 1st fermentation.
* There is no particular measurement that you add this much amount (like 50 g) of flour during the 1st fermentation. Just add a little amount of flour in the beginning. Allow it to rest for about 30 to 45 mins. (1st fermentation) and then add the remaining flour in batches.
* Always knead the dough gently. Don’t rub your dough to the surface applying too much pressure on it. The dough will be sticky so don’t get tempted to add some more flour. It gets soft while you keep kneading it.
* You can add any herbs like basil or oregano while you add salt.
* It’s advisable that you keep the bread covered with a plastic wrap or kitchen towel after baking to lock the moisture inside and avoid the bread from becoming hard.
* This homemade bread stays in your refrigerator for about 1 week to 10 days when stored in an airtight container.
