Pomegranate salad

INGREDIENTS
1 lb cucumbers chopped
2 Roma tomatoes seeded and chopped
½ red onion chopped
2 tbsp chopped cilantro
½ cup crumbled feta cheese
1 cup pomegranate seeds

Dressing:
3 tablespoons olive oil
2 tablespoons fresh squeezed lemon juice
½ teaspoon salt
¼ teaspoon freshly cracked black pepper

Method:
1. In a large bowl, add cucumbers, tomatoes, red onion, cilantro, pomegranate, and feta.
2. In a bowl or jar, whisk together olive oil, lemon juice, salt and pepper until well combined.
