This year, I made the most beautiful, naturally coloured rice paper dumplings and honestly… they look like a celebration on a plate.

They’re steamed, low-calorie, super filling, and take less than 30 minutes to make. No frying. No heavy feeling. Just fresh, vibrant, and festive.

🌈 Colorful Veg Dumplings (Low Calorie)

Serves 3–4

Ingredients for Filling

• 1 cup cabbage (finely shredded)
• 2 carrots (shredded)
• 1 cup tofu or paneer (finely chopped)
• 3–4 garlic cloves (minced)
• ¼ inch ginger (minced)
• 2 tbsp green onions
• 3 tbsp soy sauce
• 1 tbsp sriracha
• 1 tsp vinegar
• 1 tsp salt
• 1½ tsp black pepper powder
• 2 tsp oil

For Natural Colours

• ¼ cup purple cabbage (pureed)
• 1 big carrot (pureed)
• ¼ cup beetroot (pureed)
• ½ tbsp turmeric powder
• 10–12 rice paper sheets

How to Prepare the Colours

In 4 separate bowls:

Purple: 4 tbsp purple cabbage puree + 1 cup hot water. Cover 5 mins.
Orange: 4 tbsp carrot puree + 1 cup hot water. Cover 5 mins.
Red: 3 tbsp beet puree + 1 cup hot water. Cover 5 mins.
Yellow: ½ tbsp turmeric + 1 cup hot water. Cover 5 mins.

Strain and keep the coloured water ready.

Prepare the Filling

Heat oil in a pan.

Add garlic and ginger. Sauté till fragrant.

Add cabbage, carrots, tofu/paneer and green onions. Cook on high for 2 mins.

Add soy sauce, sriracha, vinegar, salt and pepper.

Cook till well combined and tender.

Switch off flame and let it cool completely.

Assemble

• Cut each rice paper into 4 quarters.
• Dip 2 quarters into coloured water till soft.
• Add 1 tbsp filling in the centre.
• Fold and shape into dumplings.
• Repeat with all colours.

Steam

Steam on high flame for 10–12 minutes.

Serve hot with dumpling sauce or peanut sauce.
