Peanut Butter Yogurt Bites
Ingredients
Yogurt Filling
•2 cups whole milk plain Greek yogurt
•1/2 cup natural peanut butter (drippy)
•4 tbsp PB2 Powder
•5 tbsp maple syrup
•1 tsp vanilla extract
•Pinch of salt
Chocolate Coating
•1 1/2 cups GHIRARDELLI Dark Chocolate Melting Wafers
Instructions
1)Make the filling: In a bowl, mix yogurt, peanut butter, maple syrup, PB2 Powder, vanilla, and salt until completely smooth and thick.
2)Form: Line a baking sheet with parchment paper. Scoop about 1/3 cup of the mixture per cluster and shape into thick discs (about 1 inch thick). You can also use silicone muffin liners for perfectly round shapes.
3)Freeze until solid: Freeze for 2–3 hours, or until completely firm.
4)Melt the chocolate: Microwave chocolate in 30-second intervals, stirring until smooth.
5)Coat: Place each frozen yogurt disc on a fork and spoon chocolate over the top to fully coat. Let excess drip off and return to parchment.
6)Final freeze: Freeze another 10–15 minutes until the shell is set.
