Peanut butter, Coconut, Sweet potato & chickpea curry:
-1 giant sweet potato (or 3-4 small/medium ones)
– green beans (broccoli works well here too as it soaks up sauce)
– baby sweet corn
– 1 large white onion
– + any other veggies of your choice
– 2 cans full fat coconut milk
– 3 TBSP crunchy peanut butter
– 1 can rinsed & drained chickpeas
– 2-tsp garlic powder
– 2 tsp cinnamon
– 3 tsp sweet smoked paprika
– salt & pepper to taste
– olive oil for frying the onions (use water if preferred)
– make & prepare as shown 🙂
Crispy sweet & nutty tahini tofu:
– 1 large block extra firm tofu
– 4 TBSP good runny tahini
– 2-3 TBSP coconut aminos
– salt & pepper
– mix well as shown & roast in a hot oven – 250’F for 25 minutes
– use it as you wish, but it’s best the 2 ways I showed it 🙂
– it’s the best just with sweet potato & avocado too for breakfast!
Roasted pesto pasta salad:
– 4-5 large bell peppers (any colours but green!)
– large punnet of button mushrooms
– 1 large aubergine (eggplant)
– 1 250g jar of sundried tomato & garlic pesto (or any red vegan pesto)
– 500g chickpea pasta (or any pasta)
– soft creamy avocado & runny tahini to serve 🙂
– & trust me it’s even more delicious cold!
