INGREDIENTS
• 1 1/3 cups oat flour (~160 g)
• 2 scoops vanilla protein powder (optional)
• 2 eggs
• 2 ripe bananas
• 1 banana (for topping)
• 2 tbsp avocado, olive, or coconut oil
• 1 cup milk of choice
• 1/2 tsp cinnamon
• pinch of salt
• 1/3 cup chopped walnuts (~40 g)
• 3/4 cup blueberries (~100 g)

STEPS

1. Mash the bananas until smooth.
2. Add eggs, milk, and oil.
3. Mix in oat flour, protein powder, cinnamon, and salt.
4. Fold in walnuts and blueberries.
5. Pour batter into a baking pan.
6. Top with sliced banana.
7. Bake at 350°F (175°C) for about 60 minutes.
8. Cool 15–20 minutes before slicing.
