Sneak some vegetables into your diet with this simple recipe! It’s crispy and light, a sure hit with the children as well.

Ingredients
1 stalk spring onion, roughly chopped
4 medium prawns, roughly chopped
1 cup zucchini, finely shredded
1/2 cup carrots, finely shredded
1/2 cup wheat flour
1/2 teaspoon sugar
1/2 teaspoon salt
1/2 cup water
1/2 tablespoon sesame oil
1.5 tablespoon polyunsaturated cooking oil

1. Mix flour, salt, sugar into a mixing bowl with water.

2. Add the various vegetables into the mixture. Continue stirring until vegetables are evenly coated with batter.

3. To a heated pan, add cooking oil. Ensure that the pan is coated evenly with the oil. The pan should be on medium to high heat.

4. When pan is heated up, add the pancake mixture into the pan. Spread the mixture as thin as possible.

5. Add prawns when the mixture is thin enough.

6. Drizzle sesame oil by the side of the pan.

7. Cook till golden brown on the side being cooked. Drizzle oil by the side if the pancake gets too dry.

8. Flip when the side gets golden brown.
