Ingredients
1 Egg
1/2 cup plain flour
60ml low-fat/skimmed milk
1 tsp baking powder
Salt
Ripe banana
1. Mash a ripe banana in a bowl, but leave little chunks of banana in the mixture.
2. Add an egg, a quarter cup of milk, and some sunflower oil to the banana mixture. Whisk together well, but do not worry if there are still chunks of banana left.
3. Sift in the flour, baking powder and a pinch of salt into the banaa mix.
4. stir until the flour is just combined into the mixture.
5. Add to a hot pan, and serve when the pancakes are nice and golden on both sides.
6. Spice up the pancakes by adding some fresh fruit.
