RECIPE: – Matar Paneer salad with parmesan dressing
INGREDIENTS: –
Cottage cheese- 250gms
Few Chopped coriander leaves
Almonds – 5
Few chopped spring onion greens
Boil green peas- 50 gm
Slit cherry tomatoes – 7 – 8
Sliced pickle jalapenos- 4
Garlic cloves
Few thyme leaves
Honey – 2 teaspoon
Coriander Powder – 2 teaspoon
Turmeric Powder – 2 teaspoon
Cumin powder – 2 teaspoon
Dry red chilli – 1
Red chilli powder- 1 teaspoon
Parmesan cheese for garnishing
Salt to taste
Cracked black pepper- 1 teaspoon
White wine vinegar- 2 teaspoon
Extra virgin olive oil for frying
Method:
1 Cut the cottage cheese in thick slices
2 Take turmeric, cumin, coriander, red chilli
Powder, salt, thyme leaves, extra virgin
Olive oil, cracked black pepper and mix
3 Drizzle extra virgin olive oil over sliced
cottage cheese, coat it with mixture
4 Mash the boiled green peas in a bowl, add
Slit cherry tomatoes, sliced pickle
Jalapenos, crushed almonds, chopped
spring onion greens, chopped coriander
leaves and mix
5 Heat extra virgin olive oil in a pan,
grill the marinated cottage cheese and
season with salt
6 Add water to keep it moist and cook
7 Cut the garlic and dry red chilli on slices
8 Heat extra virgin olive oil in a pan, add
white wine vinegar, honey, sliced garlic,
dry red chillies and roast
9 Add salt, black pepper and mix
10 Add the dressing in green peas
preparation, and mix
11 Add salt, white wine vinegar and olive oil
12 Place the grilled cottage cheese over
the bed of green pea salad, garnish
with parmesan cheese, black pepper,
drizzle extra virgin olive oil and serve
