Each recipe feeds a family of three (one of them being a toddler) so adjust your measurements as necessary!
LEMON CHICKEN
Ingredients:
6 raw chicken tenders or 3 chicken breasts
1 egg
1 cup of flour
Olive oil
Garlic powder
Onion powder
1 slice of lemon
Salt
Pepper
1. Start by putting a cup of flour to a small bowl and beating the egg in another separate small bowl. Bread each chicken tender / breast first with flour, then dip into the egg, then back into the four to cover the whole chicken tender / breast. Repeat for all pieces of chicken.
2. Cover medium skillet with a fair layer of olive oil. Heat up oil on medium heat. Once oil is heated, add chicken tenders to pan.
3. Let chicken brown on both sides, keeping the heat on medium. Add lemon juice and spices to taste.
2. Once both sides of the chicken are brown, cover and set heat to low. Let cook for about 15 minutes or until the middle of each piece of chicken is no longer pink.
GREEN BEAN & POTATO BAKE
Ingredients:
3 large russet potatoes (peeled)
1/2 yellow onion
1 clove of garlic
1 bag of fresh green beans
Garlic powder
Onion powder
Salt
Pepper
Paprika
Olive Oil
1/3 cup of water
1. Preheat oven to 350
2. Start by peeling the potatoes and chopping into medium sized cubes. Pour some olive oil to a large casserole dish and add cubed potatoes. Add spices to taste!
3. Cook potatoes in oven at 350 for about 20 minutes or until golden brown and soft in the middle.
4. In the meantime, chop up onion and mince garlic clove. Add some olive oil to a medium skillet and set heat to medium. Add garlic and onion and sauté for about 5 minutes.
5. Add green beans to skillet and stir. Then add water. Cover with heat still on medium and let sit for about 5 minutes. Then uncover and let cook for 10 minutes or until all the water is evaporated.
6. Once the potatoes are done, take them out of the oven and add green bean mixture to casserole dish. Stir around and enjoy 🙂
