BROCCOLI ALMOND SOUP:

Broccoli Almond Soup recipe is a creamy soup has the added boost of protein, vitamins and nuttiness from almonds. It is a wholesome soup packed with nutrients.
Broccoli is a great source of vitamins k and c, potassium and fiber. This soup is immunity booster, and useful in cold and cough.

INGREDIENTS:

15 ALMONDS ( SOAKED IN WATER FOR 2 HOURS),
1 MEDIUM POTATO- DICED,
1 MEDIUM ONION-CHOPPED,
2 GARLIC CLOVES,
1 GREEN CHILLY-OPTIONAL,
200 GMS BROCCOLI FLORETS -RINSED,
1 TSP. BLACK PEPPER POWDER,
SALT ,
WATER.

WHITE SAUCE INGREDIENTS:( OPTIONAL )

1 CUP MILK,
1 TBSP. CORN FLOUR,
1 TSP. BUTTER/ PURE GHEE.

PREPARATION:

Take 1 cup milk in a sauce pan. Add corn flour to it and stir immediately to avoid lumps.
Then add butter to it and stir continuously to make a thick paste/ sauce.
TIP: KEEP STIRRING TO AVOID LUMPS.

RECIPE:

TAKE A PAN , ADD ALMONDS, DICED POTATO,CHOPPED ONION, GARLIC, SALT, WATER & CHILLY (OPTIONAL). COOK IT FOR 10 MIN.WITH COVERED LID.POTATOES SHOULD BE SOFT. THEN ADD BROCCOLI TO IT AND LET IT COOK AGAIN FOR 10 MIN. ADD WATER HERE IF NEEDED.
LET IT COOL DOWN. KEEP IT ASIDE.
MAKE FINE PUREE OF THE BROCCOLI POTATO AND ALMONDS.
TAKE A PAN ,ADD PUREE TO IT. THEN ADD BLACK PEPPER POWDER.LET’S STIR .
NOW ADD 2 TBSP WHITE SAUCE HERE. AND STIR IMMEDIATELY TO AVOID LUMPS.
ADD WARM WATER TO IT ( AS PER REQUIREMENT).KEEP STIRRING.
LET THE SOUP BOIL WITH COVERED LID.
NOW PIPING HOT BROCCOLI ALMOND SOUP IS READY TO SERVE.

FOR BABIES:
DO NOT USE
GREEN CHILLY, & WHITE SAUCE AND USE LESS BLACK PEPPER POWDER.

PEOPLE WHO ARE ON DIET :
DO NOT USE POTATO

WHITE SAUCE HELPS TO MAKE SOUP CREAMY AND TASTY.
POTATOES HELPS TO GET THICKNESS AND TASTE.
YOU CAN AVOID GARLIC TOO.
