Ingredients (1 serving):
For the Green Rice:
Cooked rice – 100 g
Spinach puree – 1/2 katori
Garlic – 1 tsp (chopped)
Onion – ¼ (chopped)
Capsicum – ¼ (chopped)
Ghee – 1 tsp
Salt – to taste
Black pepper – to taste
Chilli flakes – ¼–½ tsp
For the Crispy Paneer:
Low-fat paneer – 80 g
Salt – to taste
Black pepper – to taste
Oregano – ½ tsp
Chilli flakes – ½ tsp
Ghee – 1 tsp (for pan-frying)
For the Creamy Dressing:
Paneer – 20–25 g
Dahi – 4 tbsp
Soaked & dried red chilli – 1
Salt – to taste
Black pepper – to taste
Macros (per serving):
400 kcal | 27g Protein | 35g Carbs | 16g Fat
Instructions:
– Heat 1 tsp ghee in a pan and sauté garlic, onion and capsicum.
– Add spinach puree, salt, black pepper and chilli flakes. Cook for a minute.
– Add cooked rice and mix until everything turns bright green and flavourful.
– In a bowl, season paneer with salt, black pepper, oregano and chilli flakes.
– Pan-fry paneer in 1 tsp ghee until golden and slightly crispy.
– For the dressing, blend a small portion of paneer (20–25 g), dahi, soaked red chilli, salt and black pepper until smooth and creamy.
– Plate your green rice, add crispy paneer and drizzle the creamy dressing on top.
