Finally getting these cooking videos to you and starting with one of my all time favourite dishes!!
Spicy Quinoa Mint Salad….insert drool here!!!
Super quick and easy to make this. Here we go :
Add 1 cup of quinoa to 2 cups water in pot (you can rinse but no real need)
Bring to boil then reduce to simmer with the lid on for 15 minutes – no need to stir.
After 15 minutes it will be cooked to perfection.
While that’s happening, dice garlic and chilli then add to pan
* If you’re adding meat or seafood to this dish, add it in here with the garlic and chilli *
Add lime juice, tamari and maple syrup to pan, cook.
Slice cucumber and red onion, mix in a bowl with bean sprouts.
Add fresh roughly chopped mint (I love to add coriander/cilantro as well) then mix.
Pour over half the sauce and mix. You can leave it just like this or continue and add the cooked quinoa, mix together, add remaining sauce.
BAM – that’s it!
So super easy!!!
A meal in 30 minutes!
The flavours of this dish are so fresh and delicious I can hardly find the words to describe it.
