FOR DOUGH:
* All purpose flour (मैदा) – 1/2 cup
* Semolina (सूजी/रवा) – 1/2 cup
* Wheat flour (गेहूं का आटा) -1/2 cup
* Salt (नमक) – as per taste
* Oil (तेल) – 3 tbsp
* Water (पानी) – 1/2 cup+2 tbsp

FOR FILLING:
* Oil (तेल) – 1 tbsp
* Dry Whole Red Chili (सूखी साबुत लाल मिर्च) – 2-3
* Mustard seeds (राइ/सरसों) – 1/2 tsp
* Urad dal (उड़द दाल) – 1/4 tsp
* Fennel seeds (सौंफ) – 1 tsp
* Nigella seeds/Onion seed (कलौंजी) – 1/2 tsp
* Curry leaves (करि पत्ता) – some
* Asafoetida (हींग) – 1/4 tsp
* Green chili (हरी मिर्च) – 1
* Desiccated coconut (नारियल का बुरादा) – 1-1.5 tbsp
* Sambhar masala (सांभर मसाला) – 1 tbsp
* Turmeric powder (हल्दी पाउडर) – 1/4 tsp
* Chili powder (मिर्च पाउडर) – 1/2 tsp
* Coriander powder (धनिया पाउडर) – 1/2 tsp
* Mango powder (अमचूर पाउडर) – 1 tsp
* Garam Masala (गरम मसाला) -1/4 tsp
* Semolina (सूजी/रवा) – 4 tbsp
* Coriander leaves (धनिया पत्ती) – some
* Jaggery (गुड़) – 1 tbsp
* Salt (नमक) – as per taste
* Oil (तेल) – for frying

RECIPE:

In a bowl, put some All Purpose Flour, Semolina, Wheat Flour, Salt and some heated Oil. Then bind the dough by adding Water in it. Then cover it and keep it aside.
For filling, keep a pan on the flame, put some Oil, Dried Whole Red Chilies, Mustard Seeds, Urad Dal, Fennel Seeds, Nigella Seeds/Onion Seeds, Curry Leaves, Asafoetida and some chopped Green Chilies in it and roast them. Turn off the flame and put some Desiccated Coconut, Sambhar Masala, Turmeric Powder, Red Chili Powder, Coriander Powder, Mango Powder and Garam Masala Powder then roast all the spices. Put some Semolina and roast it as well. Then put some finely chopped Coriander Leaves, some Jaggery and some Salt. The filling will get ready in this way.
Then take the dough and make it smooth. After then, make the small dough balls. Take a dough ball, roll it then apply some Water on it and fill the filling and overlap it and with the steel bowl, make it even and equal.
Then give it design with the fork. In this way, make all the Gujiyas and fry them in the Oil.
Serve the Namkeen Gujiyas with the Green Chutney.
