A healthy option, celery is full of vitamins A, C , K and is brimming with antioxidants. As celery is rich in fibre, it takes lot of calories from the body to get it digested. This is a good choice for people looking to reduce their body weight. Additionally it has lots of medicinal properties and removes toxins from the body which makes it as a good detoxifying agent. We can add other vegetables like carrot, potatoes and almonds to make it richer as well for kids. Celery by nature has a good aroma and this dish can make your taste buds crave for more!!!

Ingredients:
Celery – 1 bunch
Onion – 1 no. (big size)
Potato – 1 no. (small size)
Carrot – 1 no. (medium size)
Almonds – 10 – 15 nos (Soaked and Peeled)
Garlic pods – 3 nos
Butter – 2 tsp
Salt – as needed
Ground Pepper – As needed
Spring Onions – To garnish

Preparation time : 15 minutes
Servings : 4 – 5 persons

Preparation:
– Chop the vegetables into medium sized chunks – Celery, Potato, Onions, Carrots & Spring Onions
– Soak the almonds in hot water and peel the skin after some time
– And peel the skim of the garlic pods as well
– Heat the cooker pan and once the pan is hot, add butter to it and reduce the flame to medium. When adding the butter please take care not to burn it
– Once butter melts, please add garlic and onion to the pan and saute it
– Once the onions become little transparent, add carrot and potato to the pan and cook for a while
– Add celery & almonds to the pan and mix it enough so the butter is coated on all the vegetables
– Add enough water to just immerse the vegetables in the pan. Close the pressure cooker and cook for 2 whistles
– Let the pressure release naturally and open the cooker lid. Let the boiled vegetables cool down
– Separate out the water and grind into a paste in a mixie or Blender
– Add paste into a pan and add the separated out water into the mix. Add water as required to adjust the consistency
– Add little amount of salt to the mix. Take care not to add more salt, as celery inherently has salt content and we don’t want to make the dish very salty
– Allow the mix to boil a little and transfer to the serving bowl
– Add ground pepper as needed
