Handvo is a traditional Gujarati dish that is healthy & tasty at the same time. In this recipe we are giving this traditional recipe a twist & making it even more healthier.

Sorghum / Jawar flour is best source for protein as well as fibre. It improves digestion and boosts immunity. It controls blood sugar levels as well as improves health of your heart.
vegetables like onion, tomato, cabbage, carrot, capsicum are good source of fibres.

If you are vegan, you can enjoy this with tomato sauce or any chutney that you like. if you are a vegetarian then you can enjoy this with fresh/salted butter or curd.

Ingredients:-

1/4 cup – Chopped onion
1/4 cup – Chopped capsicum
1/4 cup – Chopped tomato
1/4 cup – Chopped carrot
1/4 cup – Chopped cabbage
1/4 cup – Chopped coriander
1 tsp – Red chilli flakes
1 tsp – Turmeric
1 tsp – Pav bhaji masala
2 tsp – Salt
Half cup – Sorghum flour/ Jawar atta
1/3 cup – Semolina
1 cup – Water
1/4 tsp – Eno
1 tsp – Oil
1/4 tsp – Cumin seeds
1/4 tsp – Mustard seeds

Instructions:-

1. In a bowl, add onion, capsicum, tomato, carrot, cabbage and coriander.
Add red chilli flakes, turmeric, pav bhaji masala and salt to it and give it quick mix.

2. Then add sorghum flour and semolina and mix everything together. Make a pourable consistency batter by adding water. Now the batter is ready.

3. On hot tawa, put some oil and add cumin seeds and mustard seeds to it and let them crackle.

4. Then pour earlier made batter on it and thickly spread it.

5. Cover it with lid and cook for 3-4 minutes. Then flip it over and cook for more 3-4 minutes.

6. Once both the sides turn golden brown then your yummy, healthy dish is ready to serve hot with chutney you like.
