Let’s take a culinary trip down the lanes of Odisha with a classic Oriya dish called the Santula, a fried (bhaja santula) or boiled (sijha santula) vegetable curry dish from the east Indian state. The preparation uses a number of vegetables including raw papaya, potato, tomato, and brinjal, making it as healthy as it is delicious. Additionally, santula is known as an easily digestible curry – especially for people suffering from stomach disorders – as it is low on spices and high on greens.
Today we have made Boiled (sijha) Santula
with milk.
