Noodle nests which are an interesting twist to the routine hakka noodles with the goodness of veggies.
Veg Mayo Sandwich is a quick replacement for the routine sandwich and also has the yummy combination of mayonnaise and veggies.

NOODLE NESTS:
Ingredients:
150 gms Noodles, boiled
2 Capsicums, finely chopped
2 Carrots, finely chopped
2 Green Chillies, finely chopped
1/4 cup Cheese, Grated
1/2 tsp Black Pepper Powder
1/2 tsp Mixed Herbs
1/4 cup Maida
Salt as per taste
Oil for frying
Method:
1. Take boiled noodles in a mixing bowl. Add finely chopped carrots and capsicum to it and give a quick mix.
2. Now add some salt, black pepper powder, mixed herbs, chopped green chillies and grated cheese and mix everything together.
3. Add about 3 tbsp of maida and mix it well in the noodle mixture.
4. Heat some oil in a pan. Sprinkle some maida on you palms and put some noodle mixture on it. Press it between your palms and place it in the hot oil. Do the same with the rest of the noodle mixture.
5. Let the noodle nests cook on a low flame till light golden brown on both the sides.
6. Serve the noodle nests with ketchup.
MAYONNAISE SANDWICH:
Ingredients:
2 Cucumbers, grated
2 Carrots, grated
1/4 cup Mayonnaise
1/4 tsp Mixed Herbs
1/2 tsp Red Chilli Flakes
Salt as per taste
Butter
Bread Slices
Method:
1. Squeeze excess water from the grated carrots and cucumber and put in a mixing bowl.
2. Now add red chilli flakes, mixed herbs, some salt and the mayonnaise and mix everything well.
3. Spread some butter on the bread slices.
4. Onto a buttered bread slice, put some of the mayonnaise mixture and spread evenly. Place another buttered bread slice on it.
5. Into a pan, heat some butter and place the sandwich in the pan. Apply some butter on the top side and flip the sandwich. Let it turn to a nice golden brown on both sides.
6. Cut and serve with ketchup.
