Mung Dal cucumber Salad
This is a delicious easy high protein vegan salad which can be eaten as a snack or as an accompaniment to a meal.It can be made in under 10 minutes .An ideal high protein snack that can be made in a jiffy .This recipe is as tasty as it is healthy.Called Kosambri in kannada, it is a traditional dish from the south indian state of Karnataka.

Ingredients (Serves 3-4)
1)Mung dal(split green gram)-50gms
2)Cucumber-2
3)Coriander leaves
4)Chopped raw mango/lemon juice
5)Grated coconut
6)Salt
For the tempering
1)Oil-2 taps
2)Mustard seeds
3)Hing/Asafoetida
4)Chopped green chillies
5)Grated Ginger
6)Curry leaves
