Mushroom Omelette with Avocado Chutney.

Has Coronavirus (COVID-19) got you stuck indoors, wondering what to eat? Why not try whip up this easy dish for breakfast? Or for dinner maybe? Healthy and full of goodness.

Ingredients

Omelette:
Wholemeal protein thins (1x)
2 Eggs
2 Medium chestnut mushrooms
2 Green chillies
Coriander (approx. 1tsp)
Quarter onion
Ginger (2g)
Salt & Pepper
Turmeric powder
Chia/Flax seeds ((1stp) optional)
1 tbsp of Olive oil

Method:

1. Prepare mushroom Omelette; finely chop/slice mushrooms, chillies, coriander, ginger and onion.
2. Prepare the chutney: peel 1 avocado and use a blender to blitz it with garlic. Add salt and pepper. Blend until a smooth consistency is achieved.
3. Crack eggs into a bowl and add all ingredients including chia/flax seeds (optional), turmeric powder and salt & pepper for tasting.
4. Whisk till fluffy.
5. Heat oil and add eggs.
6. Cook until both sides are golden.
7. Use chutney as spread.
8. Serve with toasted thins, bagel or choice of sliced bread
