Ingredients (4 servings)

– 500g chicken thigh fillets, sliced
– 2 capsicum, sliced
– 1 red onion, sliced
– 2 courgettes, sliced
– 2 tbsp oil
– 1 tbsp cajun mixed spice
– 2 tbsp lemon juice

Method

1. Heat oven to 225°
2. Place chicken, capsicum, onion and courgette on one or two roasting trays – the ingredients need enough room to spread out evenly in one layer
3. Drizzle with oil and sprinkle with spice mix
4. Roast for approximately 30 minutes or until the chicken is cooked through
5. Remove from oven and mix through lemon juice
6. Allow to cool.
