►This is a super healthy and tasty Chinese style spinach edamame salad. It‘s ideally served as a side dish or appetizer with any type of your daily main meal, to provide you an extra source of green and protein. Also, it is totally vegan, very nutritious. It’s very quick and easy to make, no fancy cooking skills required.

►Here is my full recipe:

Ingredients:
1. 250g Spinach
2. 1 Star anise (optional)
3. 1 Small cinnamon stick (optional)
4. 10 Sichuan peppercorns(optional)
5. 1 tsp salt
6. 2/3 cup (100g) Frozen Edamame beans
7. 2 cloves of crushed garlic
8. 2 tsp light soy sauce
9. 1 tsp vinegar
10. 1-2 tsp honey or sugar
11. 1 tsp sesame oil
12. 1-2 tsp sesame seeds, toasted
13. 1 tbsp chopped Red chili (optional)

Instructions:
1. Boil 1.5L water in a pot. Then prepare 250g spinach. Clean it and cut off the roots.
2. When the water is boiling, put in the spinach. Blanch it for about 30 secs – 1 min.
3. Drain it, transfer the blanched spinach into cold water to stop it keep on cooking. Then drain it again, and remove as much water as possible by squeezing it gently between your 2 hands.
4. Chop the spinach briefly into about 10cm long pieces, put in a mixing bowl.
5. Put 800 ml water in a pot, add in 1 Star anise, 1 Small cinnamon stick, 10 Sichuan peppercorns, and 1 tsp salt, bring it to boil. If you don’t like the flavour of spices, just 1 tsp of salt will do. Boil for 1 min, then take them out. Put in 2/3 cup (100g) frozen edamame beans. Bring it to boil, and keep boiling on low heat for 5 mins. 5 mins later, drain it, and cool it down with cold water. After it’s cool down, drain it again, and put into the same mixing bowl.
6. Then prepare the salad dressing. Put in 2 cloves of crushed garlic, 2 tsp light soy sauce, 1 tsp Zhenjiang vinegar (or Balsamic vinegar), 1-2 tsp honey and 1 tsp sesame oil.
7. Put the salad dressing into the spinach and edamame beans, add in 1-2 tsp toasted sesame seeds, and some sliced red chili (optional). Mix it well. Then enjoy it!
