It’s been a crazy few weeks guys, and I hope you’re all staying well and safe (and distanced!). This is one of the days I ate things other than instant meals and snacks (I really haven’t been cooking a lot every day). I even had a video “happy hour” with a good friend of mine to not feel totally stir crazy and alone in my home, lol. I through in the cocktail recipe I have been loving, so I hope you guys enjoy!

Dinner pasta Recipe:
1 pack of low carb noodles (I used NuPasta)
2 tbs olive oil or vegan butter
1 zucchini
3 cloves garlic
juice 1 lemon
1 lemon zest
1 tsp thyme
splash white wine (1/4 cup)
salt
optional: 1/3 cup Nutrtional yeast
Sautee chopped zucchini and garlic in oil
add thyme and lemon zest and white wine
throw in pasta to heat
salt, lemon juice, nutch
you’re done!
