My kids love cooking these Healthy Easter Bunny Tails with me in the kitchen, in our only little kids cooking show.
They’re really just a healthy bliss ball, with coconut, lime and passionfruit. But come Easter, you can call them bunny tails and the little ones will love it.
I often make a double batch of these and pop them in homemade paper bags the kids have decorated and gift them to friends for Easter. It’s really cute.
You’ll need:
1/2 cup cashews, soaked for 2-4 hours
1 cup blanched almond meal
1 1/2 cups desiccated coconut, extra for rolling
3-4tbsp maple syrup
1 to 2 limes, zested and juiced (or 5 drops lime oil)
1 to 2 passionfruit pulp
Then:
Drain the cashews and pop it all in a blender and combine until a thick paste. Roll them in extra coconut and store in the fridge for a few weeks or freezer for months.
