Hi everyone!! I hope you are all enjoying your time in quarantine, and getting creative in the kitchen! I have been experimenting with so many different recipe’s and I really liked how this vegetarian black bean enchilada dish turned out. The best part is, one enchilada is under 300 calories (you need to use the carb wise tortilla to make it low calorie) I hope you give it a try! Adjust salt as needed!
Please see the ingredients needed below:
Enchilada Sauce:
1.5 tbs oil
2 cups vegetable broth
3 tbs flour (i used brown rice flour)
1 tbs ground chili
1 tsp ground cumin
1/2 tsp garlic powder
1/4 tsp dried oregano
1/2 tsp salt
2 tbs tomato paste
1 tsp white vinegar/apple cider vinegar
Fresh ground pepper
Squeeze of lime
1 tsp Ketchup
Touch of agave/sugar
Black bean filling:
1.5 tbs oil
2 cans black beans (mashed)/Refried beans
1-2 white onions
4-5 cloves garlic
1 tsp paprika powder
1 red bell pepper
1/4 cup water
1 tbs Peri Peri sauce
1/4 cup Mexican cheese
Salt & fresh ground pepper to taste
*you can also add pickled jalapeno’s/touch of salsa or salsa verde for added freshness into the mixture

1/4-1/2 cup Mexican cheese to top off
