Italian inspired, this Cucumber, Tomato and Chickpea Salad are one of my favourites. I don’t know why they’re called chickpeas, but it’s a cute name, so I’ll take it. This is a healthy salad, as well as a balanced combination of carbohydrates, fats, and proteins. The most amazing thing is that all these veggies are available in every season. It’s a great side dish for travel and gathering, And alongside chickpeas is also the best source to lose weight.

CHICKPEA SALAD
Calories- 182
Time- 10 Minutes

INGREDIENTS

• 2 cup chickpeas, rinsed and drained
• 1 cup diced red onion
• 1 cup diced cucumber
• 1 cup diced red tomatoes
• 3 chopped green onions
• 1 diced green bell pepper
• ¼ cup chopped fresh mint and basil

DRESSING

• 3 tbsp olive oil
• 2 tbsp lemon juice
• 1/2 tsp salt (or to taste)
• 1/2 tsp black pepper
• Optional: 1 tsp red pepper flakes
