Dinner Rolls
1/2 cup shortening
1/4 cup sugar
2 tsp salt
1.5 cups boiling water
2 T active dry yeast
1/2 cup warm water (110-115F)
3 eggs
6.75 – 7.25 cups all purpose flour
1/4 cup butter, melted
In mixing bowl combine shortening, sugar and salt. Add boiling water and let cool to 110-115F. Dissolve yeast in warm water. Add yeast mixture, eggs and 3C flour to shortening mixture, mix well. Stir in enough remaining flour to make a soft dough and knead for 6-8 mins.
Place in greased bowl and turn to grease dough ball. Cover and let rise in a warm place until doubled, 45 mins. Punch dough down, turn onto floured surface and cut into circles. Place 2 inches apart on baking tray and allow to rise until doubled, about 30 minutes.
Bake at 400 for 10-12 mins. Brush with melted butter.
Easy Cheddar Biscuits
2 cups flour
2 tsp sugar
2 tsp baking powder
1/2 tsp salt
3/4 cup shredded cheddar
1.5 cups heavy cream
Preheat oven to 425. Line baking sheet with parchment. Whisk dry ingredients together. Stir in 1/2 cup cheese and cream. Stir until combined. Turn out onto floured surface and knead until mixture comes together. Pat into 8″ disc and cut into 8 wedges. Bake for 7-9 mins then top with cheese. Bake an additional 7-9 minutes. Serve warm.
