Usually, the words “healthy” and “desert” don’t mix all that well… Not today! Get a great protein boost from these light and sweet, nutrient-rich yogurt cups!
Ingredients:
Pastry dough (we used phyllo)
Fruit of choice (we used blueberries, blackberries and banana in ours)
Yogurt mixture: Mix plain or vanilla greek yogurt with whipped cream in a 2:1 ratio of yogurt to whipped cream
Honey (sweeten the yogurt mixture as desired)
Dark chocolate (for shaving on top)
You will also need a muffin tray (and a way to make the cups not stick, like cooking spray) and an oven.
Directions:
Fold your pastry dough into the muffin tray to make cups to hold your fruit of choice. Add the fruit to the bottom of the cups.
Place the cups into the oven and cook according to your package directions. (For phyllo dough, we did 12m on 375F)
While that’s cooking, mix together yogurt and whipped cream in a 2:1 ratio and sweeten as desired with honey.
Once cooked, drizzle the yogurt mixture on top of the fruit cups.
Finally, garnish with shaved chocolate and/or cinnamon.
