So today we are cooking Jodhpur style Paneer ki sabzi which is based on a Onion gravy and doesn’t use any tomatoes.

So let’s get down to the ingredients required:

400 gms Cottage cheese cubed into 1 inch pcs
15 onion rings

For the Gravy:-
4 onions roughly equal to 250 gms pureed in a mixer grinder
2 tbsp Ginger Garlic paste
4 tbsp Ghee (Clear Butter)
Whole Spices: 4 cloves, 4 Cardamom, 2 Bay leaves, 2 inch pc of Cinnamon

For later:
250 gms Curd (Yoghurt)
1 tbsp Salt
1 tbsp Red chilli powder
2 tbsp Coriander powder
1/2 tbsp Turmeric powder

In a pan pour the ghee and bring it to heat, add the whole spices and fry them for 30 seconds, after that add the onion puree and then the ginger garlic paste, add a little salt to allow the onions to cook faster and keep cooking for 10 minutes. Once the onion mixture has thickened add the spice powders: Chilli powder, Coriander Powder and turmeric powder and keep cooking for another 10 minutes or till the mixture turns brown in color.
Now reduce the flame to sim and add the curd through a sieve and keep stirring. Once the curd is mixed increase the flame to medium and add the salt and cover the pan for 5 minutes.
Remove the cover, now you’ll see the ghee floating on top, now you can add the onion slices and cottage cheese cubes and cover the pan again for 5 mins and reduce the flame to low.
After 5 mins your Curry is ready.
