Broken Wheat In Mason Jar Salad | Healthy Recipes
INGREDIENTS:
For the spicy kabuli chana
100 gms chickpea (kabuli Chana) soaked overnight & boiled in a pressure cooker for 7-8 whistles
1 clove of garlic, finely chopped
1/2 tbsp oil
1/2 tsp coriander – cumin seeds
1/2 tsp red chilli powder
Salt to taste
Other ingredients
1 cup broken wheat (Dalia), soaked for 2 hours & cooked in 3 cups of water all the along with salt, drained completely
10-12 cherry tomatoes, halved
2 small sized red & yellow bell peppers, cored and diced
1 cup sweet corn, boiled
3 green onions, diced along with greens
Salt & pepper to taste
For The Dressing
1 cup coriander leaves
1 tbsp lemon juice
2 garlic cloves
1 no. green chilli
2 teaspoons cumin seeds
1/2 teaspoon chili powder
1/2 teaspoon salt
2 tablespoons extra virgin olive oil
Method-
1. To make the dressing, afd all of the ingredients to a food processor or blender and blending until smooth.
2. For making the spicy kabuli Chana mixture
3. Heat oil in a non stick pan, once the oil is hot add the finely chopped garlic & saute for 1 minutes till the raw taste
5. Add the cooked & drained kabuli Chana & cook for 2-3 minutes, till the Chana are well coated with masala.
6. Remove from flame & keep aside.
7. To assemble the salad
8. Add a part of cooled broken wheat (Dalia) into a Mason jar & sprinkle with salt & pepper powder.
9. Then top with som boiled corn and even out the layer. Sprinkle some salt & pepper.
10. Then spread a layer of the prepared masala chickpea mixture.
11. Then layer the bell peppers, cherry tomatoes & spring onion on top of each other in any order you wish.
12. Top with 2 tbsp of the dressing and close the lid & refrigerate for 3-4 hours.
13. Shake the Mason jar to ensure that the dressing is well mixed with the salad.
14. You can alternatively make this Layered salad in a bowl also & mix in the dressing just before serving
