Recipe Ingredients list:
1 cup quick oats
1 cup frozen or fresh vegetables of your choice
1 small onion chopped
1 teaspoon cumin
1.5 tsp curry powder
1/2 tsp turmeric powder
Salt to taste
3 tablespoons olive oil
3 cups of water ( you can add extra water if you think oatmeal is getting too thick)
Method: Heat olive oil in a wok
Add cumin seeds and cook until puffed
Add curry powder and turmeric powder
Add vegetables and salt
Sauté for a couple of minutes, then cover and cook until vegetables are tender.
Add water, let it boil then add oats, reduce the heat and cook until oats are done,
about 3-4 minutes or as per instructions on your oats package.
Optional: You can add chopped cilantro, some peanuts and cranberry.
