In this video I am giving you tips on How to Eat Healthy on a Budget! I am also sharing 2 of my favorite Budget-Friendly and Healthy recipes! Black Bean Quesadillas are a regular rotation now in our house and Sweet Potatoes have always been a favorite! You can certainly mix and match these recipes with different vegetables or even add meat if you want. But if you want to keep costs down then just keep it simple and easy. Trust me it will still taste amazing and those beans will definitely fill you up!😄

Black Bean Quesadillas

15oz can Black Beans (drained and rinsed)
1 cup whole sweet corn (can or frozen)
1/2 cup chopped red onion
1 garlic clove (finely chopped or minced)
1/2 teaspoon cilantro
2 cups shredded cheese (I used Mexican cheese)
2 tablespoons homemade taco seasoning (see below) or 1 pack of store bought.

Taco seasoning (Makes enough for 2-3 batches/uses. You only need 2 tablespoons for the black bean quesadillas)

2 tbsp Cumin
1 1/2 tbsp Chili powder
1 tbsp Adobo seasoning (optional)
1/2 tsp garlic powder
1/2 tsp paprika
1/2 tsp salt
1/2 tsp pepper
*If you don’t have adobo seasoning just add 1/2 tsp onion powder and a little more garlic powder.
