Today I show you one of my favorite lunches. A hearty veggie sandwich. This sandwich is gluten free and no mayo allowed. Here is what you will need for this Easy Gluten Free Veggie Sandwich.

Ingredients:
2 slices toasted gluten free bread
oil free hummus
mashed avocado
sliced cucumber
sliced red onion
shredded carrot
lettuce and tomato
salt and pepper to taste (optional)

Place the two slices of toasted gluten bread side by side.
spread hummus on one slice and mashed avocado on the other.
add shredded carrot to the avocado side and gently press
add cucumber, then red onion, tomato and lettuce. Slice in half and enjoy!
