These thai turkey meatballs were one of my favorite discoveries while I was playing around with keto. I am no longer on keto, but this is a super easy and healthy dinner recipe that I share with a lot of my clients!
For Meatballs:
1 lb ground turkey
1/2 cup zucchini, shredded & liquid squeezed out
2 tbsp green onions, finely chopped
1 tbsp basil, finely chopped
2 tsp ginger, diced
2 garlic cloves, diced
1 tsp red curry paste
1 tsp fish sauce
1 tbsp coconut milk (canned)
For the Sauce:
1 cup coconut milk (canned)
2 tbsp tomato paste
2 tsp red curry paste
1/2 tsp fish sauce
Directions:
1. Shred the squash cover with salt and let sit for 10 min
2. In a medium bowl, combine the meatball ingredients and mix with your hands thoroughly. Make 16 meatballs by spooning heaping 1 tbsp of mixture and rolling between your hands. Lay on a cutting board or plate. Set aside.
3. In a small bowl, whisk together sauce ingredients and set aside.
4. Preheat large skillet on medium-high heat
5. Add 2 tbsp avocado oil
6. Add meatballs and sear each side 2-3 minutes- no need to cook the meatballs through.
7. Bring the heat down to medium, pour the sauce over the meatballs and simmer for 15 minutes
8. Serve with peanut sesame noodles, rice, or whatever else you fancy 🙂
