Ingredients: Mixed greens, quinoa, cucumber, tomatoes, avocado, roasted vegetables (I used Brussel sprouts, but can use other vegetables or mushrooms), pickled onions, spring onions, salt, pepper, vinaigrette.
Vinaigrette recipe: 3 Tbsp olive oil, 3 Tbsp balsamic vinegar, 1 Tbsp dijon mustard, optional nutritional yeast.
