Hey! Welcome to Easy Vegan Quarantine Cooking Ideas Part 7!! We show you how to make a really quick, healthy, vegan mac and cheese. VEGAN MAC & CHEESE
Ingredients
3/4 cup raw cashews (soaked & drained)
2 tbl miso paste (I like Miso Master Organic
Chickpea Miso)
2 tbl nutritional yeast
1/2 tsp salt
1 tbl + 1 tsp Earth Balance buttery spread or
vegan butter (optional)
1 tsp lemon juice
1/2 inch raw turmeric root OR 1/2 tsp powder
3/4 – 1 cup water
1/2 to a full yellow zucchini squash (optional)
veggies to steam as a side (I used broccoli and asparagus, but roasted brussel sprouts work well too)
1 package organic pasta of your choice OR
make zoodles with a spiralizer or vegetable
peeler (cucumber or zucchini works well)
garnish with your choice of additional nutritional
yeast, salt, ground pepper, or dried basil

*this also works well as a steamed veggie dip

1. Soak the cashews in warm water for up to 1 hour, then drain.

2. If cooking pasta, boil water & cook pasta first. Make the cheese sauce while the
pasta cooks.

3. In a Vitamix add the cashews, miso paste, nutritional yeast, salt, Earth Balance,
lemon juice, turmeric root OR turmeric powder, yellow zucchini & beginning with a 1/2 cup water, adding more to your desired thickness. I find I like the consistency of 1 cup of water
personally. Blend on high for 2 – 3 minutes, until the Vitamix begins to warm the sauce.

4. If you are choosing to spiralize vegetable noodles for this meal, go ahead &
prepare them now. If you are choosing the cooked pasta option, drain pasta in a
colander when cooked, then place back into the cooking pot (no heat) spoon the
cheese sauce onto the pasta of your choice & mix well. Serve immediately & chow
down. If you plan on keeping leftovers, you will want to add a little bit of water to the
sauce & pasta when you heat it up to bring back a bit of moisture or store the pasta and sauce separately for a fresher leftover option.
