Hello everyone today I am uploading recipe for making vegetarian couscous salad at home. Couscous is basically Semolina. Initially it was considered a delicacy of North Africa. But slowly it made its way into the hearts of millions of people world over. It is liked for its taste and also for the countless benefits. It is very popular with the health-conscious people as it helps to build muscles and reduce weight. When mixed with colourful vegetables it makes for a light and nutritious salad.
INGREDIENTS
Couscous – 1 cup
White chickpeas – 1 cup (boiled)
Yellow Capsicum – 1 cup (diced)
Spinach – 1 cup (chopped)
Tomatoes – 1 cup (diced)
Carrot – 1 cup (diced)
Mushroom – 1 cup (parboiled)
Fresh Coriander leaves – 1 cup (chopped)
Cucumber – 1 cup (peeled and diced)
Broccoli – 1 cup (parboiled)
Sweet corn – 1 cup (par boiled)
Vegetable stock
Water – 2 cups
Carrot – 1 piece
Onion – 1 piece
Cauliflower – 4 or 5 florets
Salad – dressing
Olive oil – 2 tbsp
Mustard sauce – 2 tbsp (according to your taste)
Apple cider vinegar – 2 tbsp (according to your taste)
Honey – 2 tbsp (according to your taste)
Lemon juice – 2 tsp (according to your taste)
Method
1 Make vegetable stock by boiling carrot, onion and cauliflower in water.
2 After boiling simmer for 30 mins and then switch off.
3 Strain. Then add couscous and leave it aside for 30 mins.
4 Dice vegetables like tomatoes, capsicum, cucumber and carrots.
5 Pre boil white chickpeas
6 Parboil mushrooms, broccoli and sweet corn
7 Chop coriander and spinach
8 In a bowl mix all the vegetables and chickpeas together and leave it aside
9 Make the salad dressing with olive oil, mustard sauce, honey, lemon juice and apple cider vinegar
10 Add couscous to the salad.
11 Sprinkle salad dressing over the vegetables and mix well
12 Decorate and serve
