Ingredients ( serving: 4 people)
Split white urad dal (safed urad dal) 300 grams
Curd (Dahi) 500 grams
Cooking oil 250ml
Cumin seeds (jeera) 1 teaspoon
Black salt ( kala namak) 1/2 teaspoon
Red chilli powder (lal mirch) 1 tablespoon
Salt 1 to 2 tablespoon
Sugar 2 to 3 table spoon
Water 2 to 3 cups
Coriander (optional) For garnishing

Take 300 grams of white split urad dal
Wash it thoroughly then add 2 cups of water
Cover and soak it for 8 to 10 hours
Strain all the water
Put few tablespoons of soaked dal in a grinding jar
Grind it to make a smooth paste
Do not add too much we need very thick texture
Urad dal is rich in fibre, helps in digestion
It also improves bone health as it contains calcium, magnesium, potassium and other minerals
It should be a thick paste
Grind all the dal same way
Let it rest for 15 minutes

Saltwater for soaking vadas:
Take 2 to 3 cups of water
Add 1 to 2 tablespoons salt and mix well till it dissolves

For masala:
Heat a pan or kadhai
Add 1 tablespoon cumin seeds(jeera) and roast it
Cumin (jeera) is rich in iron and also promotes good digestion
Once golden, remove it and let it cool
Take the roasted jeera in a grinder jar and add 1 teaspoon black salt
Grind it to fine powder

Prepare Dahi :
Take 400 to 500 grams curd (dahi)
Add 3 to 4 tablespoons sugar and mix well till sugar dissolves
Curd (dahi) is a probiotic food, improves immunity
It contains calcium and phosphorus to make bones and teeth strong
Add half cup cold water and mix well

For vadas:
Apply little water on your palm and take a small quantity of the dal paste
make a small ball and then press it slightly
heat around 250ml of oil in a wok (kadhai), once heated reduce the flame to low
And keep putting small balls of dal paste in it
Make few more and keep adding in the oil
Fry only on low flame
When it gets slightly golden on one side, flip
Continue cooking only on LOW flame
Take them out in a plate
Put the vadas in the salt water and let it soak for 10 minutes
After 10 minutes:
Vadas has become soft by absorbing saltwater
Squeeze excess saltwater

Take few vadas in serving plate/bowl
Add the sweetened curd (dahi)
Sprinkle some red chilli powder (as required)
Then, sprinkle the jeera and blacksalt powder
Garnish with finely chopped coriander
You can store the vadas in the fridge for 2 to 3 days and remove 30 minutes prior to serving
