Ezekiel bread with a lovely dense texture, from healthy sprouted grains and legumes, with no processed wheat flour, is easily made with a bread machine. The name Ezekiel bread is derived from the Bible verse: Ezekiel 4:9 “Take wheat and barley, beans and lentils, millet and spelt; put them in a storage jar and use them to make bread for yourself.” The wheat of ancient-of-days was unprocessed and not modified and probably not as hard to digest. These days it is healthier and beneficial for weight loss to try to be wheat free or at least go for organic and sprouted wheat and grains. I have produced a gluten free version of Ezekiel bread by using buckwheat, which is not wheat at all, but the ground fruit seeds from a flowering plant related to sorrel, knotweed and rhubarb. Combined with organic seeds and grains, kidney beans and lentils, the Ezekiel Bread produced was a dense, richly textured and plant protein rich bread.
It held together nicely to thinly slice 32 slices at around 85 calories each. The secret to not gaining is not over eating, so it will be hard to stop at one slice! But it is a healthy choice.
