1 tbsp vegan mayonnaise
1/2 avocado
handful sprouts

» Garlic Lemon Pasta
[two servings]
2 garlic cloves
1/4 cup olive oil
sprinkle lemon zest
1-2 tbsp fresh lemon juice
topped with dairy-free cheese & parsley

» Mexican Quinoa
[one serving]
1 cup quinoa
1 tbsp vinegar
2 tsp oil [I used avocado oil]
1/4 cup beans
1/4 cup corn kernels
1 tsp taco seasoning mix
chopped cilantro
