Ingredients

To roast

o Coconut oil – 1 tbsp
o Coconut pieces (chopped) – 1/2 cup
o Shallot (chopped) – 5 to 6
o Green chilly – 2 to 3
o Coriander leaves – 1/4 bunch
o Curry leaves – 5 -6 strands
o Salt – 1/4 tsp

For batter

o Idly batter – 2 Cups (500ml)
o Baking soda – 1/4 tsp

Tips:
• Paniyaram pan is needed for this recipe. If its non-stick pan no need to pour oil, if we are using iron pan pour little oil and then add batter.

• Baking soda needed only for the home-made batter, not for the store-bought batter.

• Substitute coconut oil with any oil.

• Use coconut pieces for best taste. Altering with grated coconut will change the flavor and texture.

• Cooking on the medium flame is essential for the right texture. If low flame the batter will not cook well and if high flame the Paniyaram gets burnt.
