Ingredients:

For roasting Ridge Gourd(Torai/Tori)
3 medium Ridge Gourd
Salt and oil to Season

For Bharta
1.5 tablespoon Vegetable Oil/Mustard Oil
1 Teaspoon Cumin seed
4 large garlic cloves, 1 inch ginger(Crushed)
1 green chili
Pinch of asafoetida (Hing)
2 Small Bay leaf
1 medium red onion(finely chopped)
1 Large Tomato
1 teaspoon cumin powder
1 teaspoon red chili powder, or to taste
1.5 teaspoon coriander powder
1/2 Teaspoon Turmeric Powder
Salt to Taste
1 Teaspoon Garam Masala
2 tablespoons chopped cilantro
Few Ginger strands finely chopped

Instructions to Roast Ridge Gourd:

Oven
1) Rinse the Ridge Gourd and pat dry. Cut in half, sprinkle some salt and brush little oil all over.
2) Place on aluminium foil and Roast in oven for 20 Minutes at low and 7-8 Mins on High.
3) Once cooled, Scoop out the flesh with the help of a spoon and mash it with fork or hands. Set it aside.

Stove:
1) Brush little oil all over the Gourd, make few slits through the Gourd. Put directly on heat and roast, turning often for around 10-12 minutes until completely roasted.
2) Use a pair of tongs to remove the eggplant from heat and wrap in an aluminium foil to cool.
3) Once cooled, Scoop out the flesh with the help of a spoon and mash it with fork or hands. Set it aside.

Instructions to make Bharta:
1) Heat oil in a pan on medium heat. Once the oil is hot, add cumin seed, asafoetida, grated garlic and ginger, green chili. Saute for a minute to roast everything together.
2) Add in the finely chopped onion and cook for 2-3 minutes until softened.
3) Add the chopped tomatoes and mix. Cook the tomatoes until soft and you notice oil oozing out of the masala.
4) Add Cumin powder, red chilli powder, coriander powder, salt to taste
5) Add the mashed Ridged Gourd into the pan and mix well.
6) Cook the bharta for another 5 minutes on medium-low heat, stirring often.
7) Add garam masala, Stir in the chopped cilantro and ginger Strands. Turn off the heat.
8) In case you boil the gourd, you can give it smokey effect by Drizzling desi ghee over the burning coal. Place on the Bharta and close lid for a minute.

Serve hot with Chapatis.
