Welcome! My name is Jess and I am a wife, mum to a 2 1/2 year old girl and a mumma to be, with my second girl in August! I’ve made bulk healthy blueberry muffins, chocolate muffins, cranberry and almond bliss balls and ham, cheese, spinach and sundried tomato muffins! Hope this gives you guys some inspo to do some meal prep this week to save time and moola!

Blueberry/chocolate muffins
( Recipe is for chocolate muffins but add 1 cup of blueberries ( or any other fruit) instead of cocoa powder if you wish! Keep an eye on the texture you may need to add slightly more flour depending on how juicy your berries are!

Cranberry Almond Bliss Balls

Ham, cheese, spinach and sundried tomato muffins
Inspired by recipe

Ingredients
2 1/4 cups self-raising flour
1/2 cup grated mozzarella
1 tbs chives chopped
1 cup sundried tomatoes ( make sure to add in a couple of tbsp of the oil as well)
2 tbsp greek yoghurt
1 cup (250g) milk full fat
1 egg lightly beaten
3/4 cup ham chopped
200g frozen spinach
salt and pepper, to season

Instructions
Preheat oven to 200 degrees celsius (fan-forced). Lightly grease a 12 hole muffin tin and set aside.
Sift the self-raising flour into a large bowl.
Add all remaining ingredients and gently fold through with a metal spoon until just combined.
Divide the mixture between the muffin holes and bake for 20-25 minutes or until golden.
Allow to cool in the baking tin for 10 minutes before transferring to a wire rack to cool completely.
