Vegan on a budget is our series where we show you how to eat whole food, plant based on a budget. In this first episode of our Vegan on a Budget series, we hit the 99c store and spend $10.00 (+$1.50 at Sprouts)Our first meal from this haul is a delicious Southwest Salad with a Chipotle Ranch dressing and we load up some mason jars for salads later on in the week. This is part 1 of our first Vegan on a Budget episode. Part 2 will follow on Friday, March 8th, 2019 and we will show the rest of what we made as well as go over totals. Vegan on a budget baby!
Salad Dressing Recipe
Into a blender put:
1/2 cup cashews (soaked in filtered water for 2 hours and then drained)
2 1/2 TBS fresh squeezed lime juice
3 TBS filtered water
1-3 garlic cloves
A chipotle chili from a can of chipotle chilis in adobo sauce
1 tsp of the adobe sauce from the can
1/2 tsp of sea salt
Blend until smooth. You may need to add more water to get it smooth.
