A Little peep into my sourdough bread making:
I have recently starter with sourdough breads with 100% whole wheat starter. First, I tried semolina and whole wheat bread buns with sourdough and I was happy with the results – my first experiment that I shared on this channel using sourdough.
Now that I have started to love sourdough, you will see me dig deeper into sourdough bread baking with whole grains.
Ingredients for 100% whole wheat bread sourdough Indian recipe
1/2 cup- whole wheat flour (1 cup= 235 ml) +2-3 tbsp for dusting and kneading
2 tbsp- sourdough starter (100% hydration)
1 tbsp- honey or golden syrup homemade with jaggery
1/2 tsp-salt
1/4 cup- lukewarm milk
1 tbsp butter

How does 100% sourdough whole wheat bread Indian recipe taste?
Well, it does not have a hint of sourness. Reason? Well, I am experimenting with a few things and once I establish those, I will share the secrets. Meanwhile, continue to follow the recipes as is. I have used 100% hydration starter for this recipe- which means the starter uses equal amount of flour and water = 3tbsp of whole wheat flour and 3 tbsp of water. Recently, we did a live demo on starter making in my facebook group Healthy Recipes by Homemakers. A group of homemakers started experimenting with the starter at their ends. Some have got excellent results.
