In this episode I walk through Matilo Park in Leiden before preparing a fresh pasta salad to bring at the beach in Katwijk, a small village on the Nord Sea here in The Netherlands. Today’s ingredients list includes a very tasty local cheese: Old Amsterdam!!

Ingredients x 4 pers:

– 480g Fresh tomato Pasta (360g if dry pasta)

– 100g Old Amsterdam cheese

– 1 Green Paprika – 8 tbsp Taggiasche Olives

Very easy to prepare, warm 5L of water with a pinch of salt while cutting in small cubes the cheese, the paprika and cut in 2 parts the pitted Taggiasche olives. Once the water is boiling cook the pasta according to the time indicated on your package. Drain the pasta and put it in a bowl to cool down few minutes ensuring to use few drops of olive oil to prevent the pasta o stick with each other. Then add the 3 previously chopped ingredients and stir mixing all together.

* Extra: adjust to your taste salt, black pepper and fresh basil. Don’t feel obliged, but I love to grate some Parmesan cheese on top 🙂
