Serves 4
Syns per serving – FREE
500g pasta (any variety)
4 skinless and boneless salmon fillets
300g trimmed French beans
1 red pepper
1 yellow pepper
1 garlic clove
1 lemon
1 bag watercress
100g fat-free fromage frais or quark
Cook the pasta according to the pack instructions.
Place a non-stick frying pan over a medium high heat and spray with low calorie cooking spray. Cut the salmon into bite size chunks and add to the pan. Fry for a few minutes until golden brown and cooked through.
Remove from the pan and keep warm. Add the trimmed beans, chopped peppers and crushed garlic to the pan and fry for 6-8 minutes until the vegetables are starting to brown.
Drain the pasta (saving 100ml of the water) and place in a large mixing bowl. Add the cooked vegetables, lemon zest and watercress. Add the fromage frais, pasta water and seasoning and mix well. Add the cooked salmon and mix gently so as not to break up the fish. Serve straight away.
