Veggie Sandwich:

2 Slices toasted bread
Vegan Mayonnaise
Sliced Avocado
Sliced Tomato
Red Leaf Lettuce
Cilantro
Sliced Mushrooms Sautéed in olive oil and seasoned with salt & pepper to taste…Assemble and Enjoy!

Turkey Mango Wraps: (Makes 4)

4 Lavash Wraps
8 ounces Thinly-sliced All Natural Smoked Turkey
4 cups Thinly Sliced Romaine Lettuce
2 cups Thinly Sliced, Seeded Peeled English Hothouse Cucumber (I Skipped the seeding and peeling part)
1 Ripe Mango
1/2 cup Fresh Cilantro Leaves
1 Avocado, Thinly Sliced

For the Curried Mayonnaise Spread:
Stir 2 tsp. Fresh Curry Powder in a heavy small skillet over medium low until fragrant, about 2 minutes. Stir into a bowl of 1/2 cup Mayonnaise and 2 tsp. Fresh Lemon Juice.

Cilantro-Lime Salad Dressing:

1/4 cup Apple Cider Vinegar
1/4 cup Lime Juice
1/2 Cup Olive Oil
1 Garlic Clove
1 Jalapeño
3 TBS Agave (more or less to taste)
1/2 tsp. Salt
1 cup Cilantro

Throw all ingredients except oil, into food processor or blender. Slowly add oil to emulsify. Toss over baby greens, roasted corn, plum tomatoes, roasted red peppers, toasted pumpkin seeds, grilled chicken & shredded jack cheese (optional).
(Now Honestly, I always add grilled chicken to mine, but completely forgot during filming!
