A simple recipe using ingredients easily available in your kitchen.
Ingredients:
3 large over ripened plantains
1.5 cups whole wheat flour (you can use all purpose flour or maida)
1/2 cup vegetable oil
1/2 cup regular sugar (or brown sugar)
1/2 tsp vanilla extract
1.5 tsp baking powder
1/2 tsp baking soda
1 pinch salt.
Directions:
1) Mash the bananas well or purée them with a hand blender
2) Add oil, sugar, vanilla to the banana and combine well.
3) Sieve the flour with baking powder, baking soda and a pinch of salt and add to banana mixture.
4) Fold really well and pour the bread mixture into the loaf pan.
Bake at 180 degrees for 30 to 40 minutes or till a toothpick inserted in the bread comes out clean
NOTE: you can adjust the sweetness of the bread as per your liking.
